Description

Butchery Manager job vacancy in Springbok.

A well-established, high-volume retail supermarket environment is seeking an experienced Butchery Manager to take full responsibility for a busy butchery department.

This role is suited to a hands-on leader with strong operational and commercial acumen, capable of managing stock, controlling margins, and ensuring consistent product quality.

The successful candidate will play a key role in driving profitability while maintaining exceptional standards in hygiene, food safety, and customer service.

This position requires an individual who thrives in a fast-paced retail setting and can confidently lead, train, and develop a team of blockmen and butchery staff. A strong understanding of carcass breakdown, yield control, and product presentation is essential, along with the ability to manage pressure and deliver results in a demanding environment.

Salary: R30 000 – R40 000 CTC per month.

Minimum Requirements:

  • Own vehicle with valid drivers license
  • Minimum 3 to 4 years’ butchery experience within a retail and/or wholesale environment
  • Proven management experience within a butchery or similar food production environment
  • Strong knowledge of carcass breakdown, portioning, and yield control
  • Solid understanding of stock control, wastage management, and GP% optimisation
  • Ability to lead and manage a team in a high-pressure, fast-paced environment
  • Strong attention to detail with a focus on quality and presentation
  • Knowledge of food safety, hygiene standards, and compliance requirements

Duties and Responsibilities:

  • Manage the daily operations of the butchery department within a retail environment
  • Oversee stock levels, ordering, and inventory control to minimise wastage and maximise profitability
  • Monitor and manage GP%, ensuring targets are met through effective cost control and yield management
  • Ensure high standards of product quality, cutting, and presentation at all times
  • Lead, supervise, and develop a team of blockmen and butchery staff
  • Implement and maintain strict hygiene, food safety, and health compliance standards
  • Handle customer queries and ensure excellent service delivery within the department
  • Maintain efficient workflow and productivity in a high-volume environment
  • Drive continuous improvement within the department to enhance operational performance and profitability
