In pursuance of this objective, the Food and Beverage Supervisor is required to:
- Ensure consistent delivery of high-quality service;
- Ensure staff is adequately trained to deliver required standards of service;
- Be innovative and ensure a unique guest experience;
- Ensure stock par levels are maintained;
- Ensure the desired gross profit margins are met;
- Ensure sufficient crockery, cutlery and equipment for service ;
- Ensure staff are well groomed before shift begins and during shifts;
- Ensure food and beverage outlets are inviting and setup for patrons throughout service periods;
- Oversee and assist waitrons to deliver required guest service standards;
- Maintains the cleanliness and sanitization of all food and beverage outlets;
- Place orders on time and ensure preparation of invoices for timeous payments of suppliers;
- Prepare staff rosters and ensure adequate staffing levels;
- Do cash up and reconciliation daily;
- Do daily, weekly and monthly stock takes;
- Upsell the offering of the hotel and trains staff in upselling;
- Manage restaurant, bar, banqueting, pool deck and room service orders and special requests made by guests;
- Stays abreast of hospitality and food service trends to deliver unique experiences to guests;
- Handle guests’ complaints and execute service recovery;
- Work hand in hand with Head Chef to create and update menus;
- Run shifts on his/her own as a Duty Manager and deal with all matters relating to the shifts;
- Ensure the food and beverage department is run efficiently and profitably;
- Any other tasks in line with the above as directed by Management.
COMPETENCIES
- Must be well versed in silver service, bistro-style service, banqueting styles, wine service and cocktail-making
- Must be skilled in menu creation and pricing
- Ability to stand for long periods
- Must be fully computer literate
- Willingness and ability to follow instructions
- Ability to write comprehensive reports
- Good accounting skills as the candidate will need to calculate the cost of sales and ensure the profitability of the food and beverage department
- Knowledgeable on hospitality and food trends
- Able to ensure stringent control system to ensure the protection of stock and operating equipment
- Must be a team player and able to work well with the other department heads
- Ability to complete tasks as assigned in accordance with the given deadlines
- Must be a creative, innovative and highly motivated individual who can take initiative to give guests a valuable experience
- Ability to maintain a motivated and cohesive food and beverage team
REQUIREMENTS
- Diploma/ Certification in hospitality or equivalent;
- Matric is essential;
- Minimum of 3 years experience in a 4* or 5* full-service hotel or restaurant working in a supervisory or management capacity in the food and beverage department
- Extensive knowledge and experience in POS
- Well-rounded hospitality professional
- Ability to work shifts including night work and working on weekends and public holidays;
- Own transport and a driver’s license is advantageous.
